LoafRiseLab publishes an independent bread & sourdough calculator and a practical journal. The goal is to make the input, arithmetic and interpretation boundary visible, so a visitor can reproduce a scenario rather than accept an unexplained number.
What this site helps you check
Include the flour and water inside your starter when checking hydration. Then scale the same formula to a new total-flour target without guessing at the starter’s contribution.
The Dough Hydration & Recipe Scaling Calculator explains its units and method. The supporting journal guide follows an input record through a comparison. Default values are labeled as illustrations, not universal recommendations.
Know the boundary
This models flour, water and starter by mass. It does not calculate fermentation time, food safety, salt recommendations or flour absorption, and it does not treat other wet ingredients as pure water.
The starter field contains both flour and water. Do not also include those amounts in the separately added flour and water fields. Double-counting them changes the denominator and hydration. Keep a starter build record when its feeding history is uncertain; a visual impression of thickness is not a reliable hydration measurement.
